Seal Salt and Gorgonzola
Sweet potato fries my weakness, I love them so. Salty and sweet, crispy and soft—I am besotted. The problem is, usually I enjoy these fries with a side of guilt. At restaurants they’re deep fried and caked in salt. So what about the frozen ones? They’re baked, so all good, right? Wrong. From all the frozen sweet potato fries I surveyed, they’re packed with preservatives, leavening additives and all sorts of unpronounceable ingredients to extend the shelf life and make them look a “natural’ shade of orange. So, what’s a lover to do glass tea infuser pot?
Enter Sweet Potato Frites with Parsley, Seal Salt and Gorgonzola. They’re “frites” not “fries” so you feel a little better already, non? But there’s more, of course. These frites are baked, not fried, and they’re drizzled in the most tasteful amount of heart healthy olive oil and fresh herbs. For some bonus flair, I added a similarly tasteful sprinkling of gorgonzola—a cheese that packs a killer punch, making a little go a very long way. Oh, and did I mention that they come together shockingly quickly and with very little effort? Wins all around hong kong business school.
